We are, as you might know or imagine, beer people. We are also food people. We're not really too much of your cocktail people. However, we're down to try anything with some form of Sad Panda in it! Carol's nephew (a mixologist) made a Sad Panda simple syrup and a cocktail to toast with us all during Pandamonium 2021 on Zoom (Pandamonium-at-Homeium). Since then we've made several batches at home and played around with many foods and beverages and SPSS. Now we're introducing the first batch we've made at the brewery. Here's a start of ideas to use it with, if any of you are interested in delving in!
As y'all probably know, simple syrup is very easy to make and you can Google a recipe and make it at home! We have simply substituted Sad Panda for the liquid, added a bit of the wort and cold brew coffee in the beer, and upped the sugar ratio to make it more shelf-stable, but if you make it at home with a can of Sad Panda Coffee Stout you can play around with that ratio as you like. Enjoy!

Soft & chewy ginger cookies with Sad Panda Simple Syrup
3 tablespoons butter, softened, mixed with: 1/2 cup brown sugar & 3/4 cup dark molasses & 1/4 cup cold water -- mix all that, then add: 1.75 cups white flour 1.5 cups whole wheat flour 1 t baking soda 1/2 teaspoon each of: ginger, allspice, cinnamon, cloves. Roll into balls 1" in diameter. (optional: roll in white sugar at this stage). Bake at 350 degrees for 12-15 minutes. Immediately upon removing from oven, drizzle a small amount of SPSS over each cookie and allow to sink in and drip down. Cool and eat! Sad vanilla pancakes with SPSS
1 cup unbleached white flour 1 tsp SPSS 1/2 tsp baking powder 1/2 tsp salt -- mix all of the above. In a separate bowl, mix: 1 tsp vanilla extract 2 egg whites or 1 whole egg, lightly beaten 1 tblsp canola or other veggie oil 1 cup low-fat buttermilk (or, if you never have buttermilk in the 'fridge, put 1 tblsp vinegar or lemon juice in a cup of regular milk and let it curdle a bit -- sounds gross, tastes great in this recipe) Once all those wet ingredients are mixed, add them to the dry ingredients and stir until just barely mixed in. Pour in rounds on a hot, lightly oiled griddle or pan. Cook until you see bubbles form at the edges of each pancake, then flip and cook the other side. Remove to a plate, dab with butter if you like, and drizzle with SPSS. LIP. LICKING. GOOD. |
Sad Panda simple syrup-glazed sweet potato wedges
Slice a sweet potato into wedges, toss in a bowl with olive oil and rosemary. Grill on medium hot grill, turning once, for 5-8 minutes a side. After the turn, while grilling the 2nd side of the wedge, drizzle the top side of your wedges with a few drops of SPSS. Chocolate Panda Brownies (Jordan's recipe, with SPSS added)
Brownies: 1 cup Sad Panda Coffee Stout reduced -- you'll use 3 tablespoons in this part (see below for reduction technique) 1 stick butter 1/2 cup cocoa powder 1 cup granulated sugar 2 squares unsweetened baking chocolate 1 egg 1 tsp vanilla extract 1/4 tsp salt 1/2 cup flour Frosting 6 Tbsp butter-softened 1 cup powdered sugar + 1-2 Tbsp Sad Panda Coffee Stout reduction Drizzle 3 Tbsp SPSS Start by pouring 1 cup of Sad Panda into a saucepan over low-med heat. Keep a close eye on it, as it tends to foam up a bit and could overflow. While that's working, pour yourself a pint to enjoy during the process [N.B.: H&D’s favorite instruction.] Stir frequently, simmer uncovered for about 20 min, until liquid is reduced to 1/3 cup. Remove from heat and allow to cool. Preheat oven to 325 and line a 9x5 loaf pan with parchment. Microwave butter and baking chocolate 30 seconds, then stir in the cocoa powder and granulated sugar. Microwave 30 seconds more and stir. Allow the chocolate mixture to cool for 1-2min, then add 3 Tbsp of the Sad Panda reduction, vanilla, egg, and salt. Mix well, then add flour, mix again. Pour brownie mixture into loaf pan and bake at 325 for 45-50min. These brownies are SUPER rich and fudgy, so a toothpick may not come out clean even though they are done. While the brownies are cooling, mix softened butter and powdered sugar until it makes a nice fluffy frosting. Add the remaining Sad Panda reduction (should be 1-2 Tbsp) and a splash of vanilla. Frost the brownies, drizzle with a curl or two of SPSS. Cut into bite-sized squares, frost, and enjoy! |
COCKTAILS FEATURING SPSS
Sad Panda Old Fashioned
Chill a glass (fill with ice & water, or put in freezer), and then empty it, add:
1/4 teaspoon SPSS
3 splashes of bitters (try your local distillery's bitters)
1.5 ounces Rye Whiskey (we love 5003 Distillery's Straight Rye)
stir, garnish with cherries (5003 has whiskey-soaked cherries that are mwah) & a twist of orange peel.
Chill a glass (fill with ice & water, or put in freezer), and then empty it, add:
1/4 teaspoon SPSS
3 splashes of bitters (try your local distillery's bitters)

Panda Royale
After pouring a flute of Champagne, Prosecco, or Cava, add 2 teaspoons of SPSS and garnish with a raspberry, dark cherry, or strawberry. (Note: you can add the SPSS first, but it will blend entirely with the sparkling wine rather than layer. We think it's festive to serve it layered, and allow it to mix as you tilt the glass to sip each time. By the time you get to the bottom of the glass, the wine is more infused than when you started.)

Irish Coffee with a touch of Sad Panda
Nothing says "celebration morning" like hot Irish coffee laced with sugar and a bit of whiskey, topped with ice-cold whipped cream. Before adding a sugar cube, whiskey and coffee to your mugs, pour some SPSS on a small plate and dip the mugs into it for a SPSS rim (a light dip will be less drippy). Add 1 teaspoon of SPSS to 1 C of whipping cream and vigorously shake or blend to whip. Slide a couple of tablespoons of that cold cream on top of the hot, whiskey-laced sweet coffee, sip, and enjoy! 1 oz Campari 1/2 oz. SPSS 1 oz Gin 1 oz sweet vermouth Stir all that with ice to chill, then strain into your favorite cocktail glass over a large ice cube. garnish with an orange peel twist. |
Coffee martini with SPSS
2 oz. vodka 1/2 oz coffee liqueur (we love Copper Muse's -- let us know your local favorite!) 1 oz. SPSS shake vigorously with ice in a cocktail shaker, strain into a martini glass. Garnish with a coffee bean. |
